I'm sure that as me, many others didn't like iOS 7, it could be from the new flat style, to it being extremely buggy. That's why I'm writing this tut, to help others go back to ol' iOS 6.
Prior things you should know:
- You can only go back to the latest iOS 6 depending on your device (6.1.4 for iPhone 5, 6.1.3 for others), not lower.
- All your apps will be deleted and you will need to re-download them (you'll keep your save data, don't worry).
- Take a screenshot of all of your apps and copy the pictures to your PC, so you remember which apps you had.
Here we go:
- Backup your device
Open iTunes and make a backup of your device, you'll also wanna make a backup of your backup, just in case (emergency backup), to do so, go to:
Windows XP: \Documents and Settings\USERNAME\Application Data\Apple Computer\MobileSync\Backup\
Windows Vista/7/8: \Users\USERNAME\AppData\Roaming\Apple Computer\MobileSync\Backup\
MacOS: /Library/Application Support/MobileSync/Backup/
You will see many folders (depending on your number of backups) with many letters and numbers, backup the one that was modified latest, since it's the backup you just made.
- Download iOS 6 File for your Device
We will be needing the correct iOS 6 file depending on your device. Just click the name of your device and your download will start automatically (direct links from Apple).
- Restore iOS 6
To restore iOS 6, open iTunes and plug in your device. Select your device and while holding the shift button, click on "Restore [DEVICE]", look for the file you just downloaded and select it. Your device will start to restore. Wait for it to complete.
- Set up your iPod as new
You are gonna have to set up your iPod as new as you cannot directly restore your backup from iTunes, if you try to, you will get an error saying you have to update to the latest firmware first.
- Install iPhone Backup Extractor
Now you'll wanna install this program, which we'll use to recover all data on our backup, since we can't restore it with iTunes (Windows Download | MacOSX & Linux Download).
You will install the free version, which will let us export the juicy quantity of 2 files at a time!!! (which sucks since we will have to transfer hundreds and even thousands of files). To get the premium/pro version, download this crack (link). Extract the RAR file. There will be a folder called "Crack" with a .exe file in it, copy the file to iPhone Backup Extractor's install directory (\Users\USERNAME\AppData\Roaming\Reincubate\iPhone Backup Extractor\). Now execute the Keygen.exe file that was in the RAR. The program will be executed, now just click on "Generate Serial". Turn on Airplane mode on your PC, or turn Wi-Fi on to make sure this will work. Now open iPhone Backup Extractor and click on "Register" and copy the info from the Keygen program and click "Register". You now have the Pro version.
Note: After you exit the program and re-open it, you will get the free version again, just get another serial and you'll be good to go. Though, this most probably won't be necessary since you can extract everything the first time you use it, and then the program won't be necessary again.
- Extract your Data
Now that you have the Pro version of the program, time to extract your stuff.
First, you'll wanna make a folder where you'll extract all of your data.
Open the program and select your latest backup from the list (if you get a pop-up message saying "Couldn't find System.Data.SQLite.dll." just click accept). You will see your Backup details and Available Data. Choose what you wanna extract and then select the folder you made before. You will be able to easily extract photos, contacts, calendar, SMS, recordings, videos (the ones recorded with the camera), voicemail, notes, call history, and location data. To restore your applications data, go to "Expert Mode" and select the "Application" folder, and anything subfolder. You will get the data of all apps you had before.
- Reinstall your apps
Now go to the app store or whatever you use to install your apps, and reinstall all of them (or the ones you want).
- Restore your data
Your apps will be untouched, meaning they will be as the first time you used them, to restore your data, you must run your apps at least once, and then close them from multitask, after that, download iFunbox (link), install and run it (your device should still be plugged in). Go to iFunbox classic tab and select your device. Next, go to user applications and you will see a list of your installed apps. Open the one you wanna restore data for, and you will see some subfolders and files (common folders are "Library" and "Documents"). Now go to the folder where you extracted your data, and you should see a folder called "Application", search for the corresponding folder (e.g. Netflix would be com.netflix.Netflix), and open it, copy everything that's in the folder, and paste it on iFunbox.
Do this for every app and you will get your data back.
You can now restore your music, pics, and videos with iTunes.
- Profit!!
Now just set up your wallpapers, settings, etc to your likings, and you'll have your device ready!!

One of the errors popping up from this is the iTunes 3194 error. If you run into this error immediately following the process of the restore where iTunes says it's verifying your iPhone's eligibility, you might have simply downloaded the wrong iOS 6 file. If you're sure you have the right file then simply edit the hosts file, deleting the entry “74.208.10.249 gs.apple.com”.

I updated to the base version of ios 7.0.2, can I downgrade?
Apple has stop signing restores for 6.1.4 and lower. The only way you can downgrade is if you saved and backed up your shsh blobs and make a custom build with them.
You can't downgrade from iOS 7; APTickets. Read up on them. This "tutorial" won't work for shit. There's more levels of security than just SHSH blobs now, and these new levels of security have been around since the release of iOS 6. In fact, SHSH blobs don't even exist in iOS 7 in the newer devices.
Honestly, I wish people would stop posting in this section if they don't know what they're talking about.

Did you actually perform this downgrade yourself? A video tutorial and factual evidence would have been useful.
